Meet Mike, Shanna and Wayne, pictured above.  We are uniquely qualified to succeed because of our expertise and our passion for making great beer and food craft experiences. Brew Master Wayne Milford has over 20 years brewing experience building great relationships with key figures, companies and vendors in the brewing industry all founded on his degree in Intensive Brewing Science from the American Brewers Guild in Vermont. He has designed and built six other breweries and now, it’s his turn.

Mike Dailey, the second member of our core team, has both the biochemistry background and the extensive laboratory experience to support this mission; that makes him the science behind the beer.   Mike completed his degree in biochemistry from Pittsburgh University in 2013.

Finally, on the interpersonal side of the work, Shanna Milford will be bringing the core team together. She has over 15 years of human resource and personnel management experience, she is a proven leader in HR support, and she has developed a specialty in employee relations and recruitment. Shanna completed her MA degree in Organizational Psychology from Columbia University in 2003.

We have traveled to hundreds of breweries and brewpubs across the globe and have learned what guests want and have come to expect. Over the last two years Wayne has successfully leveraged these observations and his experience to start 6 breweries and brewpubs: Two Rivers Brewing Co., Easton PA, Kohola Brewing Co., Maui HI., Cervesa Cancun, Cancun Mexico, 7 Mile Brewing, in Rio Grande NJ, Urban Village, Philadelphia PA, and BrewSA Brewing, in Freeport NY. He is also currently consulting on four additional projects. Wayne has assisted with everything from business plans and finances to recipe development, staff development, and ingredient and equipment sourcing. He has acted as general contractor bidding out jobs, overseeing contractors and keeping to strict timelines. He commissions the brewhouse, brews the initial beers, and trains the brewing staff. Additionally, he oversees the quality control of the breweries for consistency in the product on an ongoing basis.
